Environmental Monitoring

Identify the main pathogens of concern in the environment and the factors that promote their growth and survival.

Apply the Sanitary Zoning methodology (Zones 1 to 4) to classify each area of the facility according to its risk of contact with the product.

Design a balanced sampling plan that is efficient and statistically significant.

Correctly interpret laboratory results to determine whether contamination is transient or established colonization.

Implement timely corrective and preventive actions based on the area and the pathogen/indicator detected.

This intensive 8-hour course provides the essential fundamentals of applied microbiology, focusing on how pathogens such as Listeria monocytogenes and Salmonella enter and colonize processing facilities. The core of the training is the Practical Sanitary Zoning Workshop, in which participants will learn to develop a plant risk map (Zones 1 - 4). Sampling techniques, results interpretation, and specific corrective actions required to prevent cross-contamination and comply with FDA-FSMA requirements and GFSI standards are covered.

Dr. Ligia Estefanía Arízaga Collantes is an expert in Food Quality and Safety Management Systems, with a PhD in Projects and a Master of Science (Magister Scientiae) in Agribusiness. She has over a decade of experience as a consultant, trainer, and auditor for SMEs and large industries. She is a certified Lead Auditor in the main GFSI schemes (FSSC 22000, SQF, BRC), an Official SQF Consultant, and is qualified as a PCQI Trainer for the FDA's FSMA regulations. She has led the implementation of systems in key companies in the sector and currently serves as Technical Manager and Director of Quality and Safety, which gives her an indispensable practical perspective for teaching.
